Longanisa (Filipino Sausage), is a popular Filipino cuisine. Influenced by Spaniards' "Chorizo", it's a favorite food by young and old during breakfast, lunch or dinner. Can be paired with fried egg and fried rice or just a stand alone food with steamed rice. Its defining taste and characteristics varies from province to province.
